Za’atar Chicken Cutlet Caesar Sandwich with Tahini Caesar Dressing.

It's like a chicken caesar took a vacation to the middle east.  It features a crispy chicken cutlet coated in herbaceous za'atar and a creamy tahini caesar dressing.

 

Ingredients:

Tahini Caesar Dressing
Ingredients:
1 cup plain greek yogurt
1/2 cup tahini
2 tbsp olive oil
1 tbsp dijon mustard
2 anchovy filets
2 cloves grated garlic
1 tbsp lemon juice
1/2 cup grated parmesan
salt and black pepper to taste

Za'atar Chicken Cutlet
Ingredients:
Chicken Breast
1/2 cup AP flour
1/2 cup each of plain and panko breadcrumbs
1/4 cup grated parmesan
3 tbsp za'atar
1 tbsp sesame seeds
1 tsp garlic powder
1 tsp smoked paprika
salt and pepper
1 egg
Cooking oil of choice

Caesar Salad:
2 cups chopped romaine lettuce
1/4 diced pickled red onions
1/2 cup pita chips
Tahini caesar dressing
Grated parmesan and black pepper to taste


Directions:

1. Tahini Caesar Dressing:
Add all ingredients to the blender cup and blend for 30 seconds until fully incorporated.

2. Za'atar Chicken Cutlet:

Butterfly and pound chicken until thin. Set up a three step breading station: (1) AP flour seasoned with salt, pepper, garlic powder, and smoked paprika. (2) Beaten egg (3) Both bread crumbs mixed with sesame seeds, parmesan, and 2 tbsp za'atar. Preheat oil in a skillet and fry until golden and cooked through, about 3-4 minutes per side. Sprinkle remaining za'atar on top.

3. Sandwich Assembly:
Split a sesame seeded hoagie roll, leaving a hinge. Top with chicken cutlet, salad mix, and additional parmesan. Wrap tightly in deli paper or parchment.
